Sweet vs. Salty

William is a decided sweet tooth whereas I prefer salty snacks. This works out well because when we splurge on a treat I get the lion's share of our French fries and pretzels while Will gets to finish my ice cream or soda. Lately I have begun to suspect that Baby Hendrian shares William's taste in treats, because every time I have a bite of ice cream or a sip of coffee, an enthusiastic round of break dancing takes place inside me. I told Will it is probably his fault that the baby has a sweet tooth because he has been devotedly plying me with all his favorite comfort foods ever since I became pregnant. Oh well. I guess while Will is sharing his ice cream, there will just be more French fries for me. :)

Inklings of Autumn



I thought I would want summer to last forever this year, but once or twice this past month it's slipped into my mind that I might be looking forward to autumn... the misty mornings, cozy blankets, scarves, hot tea, and bright leaves sound so inviting. However, I then remember that winter comes after autumn and sternly reprimand myself. I'm still not ready for snow.

Container Garden


Last year Will and I planted only 3 or 4 tomato plants (which promptly died), and on the other extreme, several hundred radishes (which unfortunately all lived). This year I settled on a tiny container garden of mostly tomatoes and absolutely no radishes under any circumstances. The plants seemed to enjoy the rainy morning yesterday. :)

Summer Snippets.

Hello again. It's been some time since I last blogged.

The short explanation is: I haven't written any posts. I haven't taken any photos. I fail at blogging.

The long explanation is: Towards the end of February, Will and I discovered that we were expecting a baby! :D Last August I miscarried our first baby, and the recovery was rather lengthy and difficult, physically as well as emotionally (though we felt so comforted by the prayers and loving support of friends and family). Needless to say, we are so thankful and excited and overwhelmed that God chose to bless us with the gift of another precious little life in His good timing. :) We don't deserve such goodness.

Shortly after my last post, morning sickness set in with a vengeance and so I stopped writing because: A) the very thought of driving to the library and looking at a computer screen made me nauseous, and B) I couldn't explain why I felt so nauseous because we hadn't announced that I was pregnant yet. Somehow my new repertoire of skills such as making toast (or, if I was feeling really adventurous, macaroni and cheese... from a box) or folding a pile of laundry (...or falling asleep in the middle of folding the laundry), or hanging out on the bathroom floor seemed like they would be difficult to explain. However, I am very thankful that I was feeling sick because it was reassuring to know that our baby was growing. :)

By the time we revealed the news and I started to feel better in mid-May, we were getting ready to move into a new rental house in town, so we were busy with painting and packing for a few weeks. We moved into our cute little home on June 1st, and then we spent the next month unpacking and settling in. I did a little part-time work at a gift shop for a month, we butchered chickens and went to market a few times, we had our 20 week ultrasound (so exciting!), I visited my parents, my parents came to visit us, Will has been working a crazy amount of hours, and the summer has flown by.

Things seem to finally be slowing down and settling in a bit, so hopefully my next update will be a bit more timely. Now that we live in the village limits, we actually have internet at our house, so who knows, maybe it will only be 4 months until my next post. ;)

Note: My parents took all the photos in this post when they visited at the end of July, and I think they are probably the only documentation I have of our summer. Yes, I really have been that awful at writing things down and taking pictures. It's been a wonderful summer though. :)

Coffitivity

Have you ever heard of Coffitivity? If you click on the link you can listen to the ambient background sounds of a coffee shop in the comfort of your own home. Apparently it's supposed to boost your creativity! The website says that "the mix of calm and commotion in an environment like a coffee house is proven to be just what you need to get those creative juices flowing." This seems to make sense to me, because while I like complete quiet for reading, I always thought it was much easier to write rough drafts of papers in college when I typed them up at a coffee shop. Maybe I'll give it a listen and see if it helps me write a more creative post next week. ;)

Just last week I stumbled upon the work of Polish photographer Marcin Sobas. The landscapes he captures are absolutely breathtaking, particularly the way he highlights their light, color, and texture.

Happy Pancake Day!

Today is Fat Tuesday (what a great holiday), which means that it's also National Pancake Day. Delicious! If you live near an IHOP, you can celebrate by getting a free short stack of buttermilk pancakes today, but if you don't live near one or don't like crowds, pancakes are still a great way to load up on all things rich with butter and eggs before Lent.

To celebrate, here's one of my favorite pancake recipes (courtesy of Martha... of course).

Blueberry Pancakes
From Martha's American Food, by Martha Stewart

Ingredients:
1 3/4 cups all-purpose flour
3 tablespoons sugar
1 tablespoon baking powder
1/2 teaspoon coarse salt
1 1/2 cups buttermilk
2 large eggs, room temperature
1 teaspoon pure vanilla extract
1 tablespoon unsalted butter, melted, plus more, softened, for skillet and serving
2 tablespoons plus 2 teaspoons neutral-tasting oil, such as vegetable
1 cup fresh blueberries, plus more for garnish
Pure maple syrup, for serving

Directions:
Sift together flour, sugar, baking powder, and salt. In another bowl, whisk buttermilk, eggs, vanilla, melted butter, and 2 tablespoons oil to combine, then whisk into flour mixture (do not overmix, batter should be slightly lumpy). Fold in blueberries.

Heat 1 teaspoon softened butter and remaining 2 teaspoons oil in a large nonstick skillet over medium heat. Working in batches, pour in 1/3 cup batter per pancake. Cook until small bubbles form on the surface, about 3 minutes. Flip; cook until underside is golden brown, about 3 minutes. Add more butter as needed between batches. Serve warm with butter and syrup, garnished with additional blueberries.

Doesn't that sound just delicious? Another traditional Fat Tuesday food - which I had never heard of before Will introduced me to them last year - is paczki (pronounced PUNCH-key). It's a special kind of Polish doughnut traditionally made only around Fat Thursday and Fat Tuesday, filled with cream, fruit, chocolate, liquor, etc. It's such a fun tradition, and I admit that Will and I have been excitedly looking forward to them for some weeks now. I found this recipe for them last week, which looks very delicious, but today Will is picking ours up from Ryke's Bakery. Their paczkis are so delicious that I definitely don't feel the need to attempt them myself this year. :) 

I think pancakes for dinner and paczkis for dessert sounds just right for Fat Tuesday (it also sounds like a recipe for a food coma and a sugar crash, but we'll have all month to recover I suppose). :)

Monthly Goals: March 2014

 A new month of exciting possibilities. Here we go! :)
Note: I wanted SO BADLY to use a picture of daffodils for March, but there are absolutely none to be seen, still buried under several feet of snow. Maybe I will be able to find some for the Report Card.


Bust the Clutter: Everywhere!

I have a dream of an organized house, where everything is in it’s rightful place. A home of peace and calm, comfort and coziness. A haven for William to return to and rest after a long day of work without any busy and fretful piles of clutter to look at. This is rather a broad, cumbersome goal, but it’s something I really need to get to work on with all diligence and creativity. Besides, I have a bit of the spring cleaning bug in my blood, and maybe it will help me think of spring even when everything is still buried under snow and ice.

Purge Closet
I started on this goal last month and made good progress but it needs a tad more work.

Start Seeds in Mini Greenhouse
My Mom gave me a little miniature indoor greenhouse which I‘d like to set up this month so I can start a few seedlings for my herb and vegetable garden this year. There hasn’t been much sun or warmth so it’s hard to remember that I need to start preparing, but this would be a good month to begin.

Balance & Maintain Checkbook

Balancing the checkbook is something that’s easy to procrastinate on, but because of the farm we have two checkbooks to keep track of and it’s even more crucial to keep on top of them. I need to balance them both for this year and make sure I ask for Will’s receipts and enter them either daily or weekly. I’d also like to make a filing system for receipts and a spreadsheet to keep track of farm expenses.

Have a Birthday
To celebrate, I thought I’d throw in a fun goal this month. This one shouldn’t be too difficult to manage. :)

Recurring Resolutions

Blog 1-2 Times Per Week: Off to a good start….

Read the Bible Daily: Stay diligent with the daily readings with Will, as well as my individual reading and marking time.

Journal 2-3 times: If I journal even more than once this month, it will be an improvement.

Read Four Books: One of my favorite goals. :)

Finish Writing Thank-You Notes: Last month to finish them before our first anniversary. No pressure....

February 2014 Report Card

February went by far more quickly than even I thought possible, and here we are at another report card. I think one of next month’s resolutions will be to make fewer goals so I don’t bite off more than I can manage. :)




Bust the Clutter: Downstairs | C
I actually made pretty good progress on this one and got things looking a lot neater in the living area at the back of the house. However, the front living room got a little MORE cluttered, and there are still several piles and boxes that need to be thoroughly conquered and put in their proper place (not just shuffled about or straightened).

Wash Eggs Daily | B
To be honest, I didn’t wash the eggs every day, but this was mostly because our hens’ production plummeted and we were only getting 2-4 eggs some days. To consolidate the process, I sometimes let the eggs accumulate until I had a full dozen to wash and put away, however this worked fine because of the small numbers, and I never had an egg overflow problem like last month. I gave myself a B for following the spirit of the law, if not the letter.

Purge the Closets | B
I was able to go through quite a lot of our clothes and cull a whole pile, but I still have a little ways to go before this goal is complete.

Write a Cleaning Schedule | D
I promptly forgot this was even one of my goals, and so I didn’t even make an attempt to sit down and write out a formal schedule to follow each week. I did, however, loosely follow the schedule recommended by the Fly Lady anyway, so I won’t fail myself completely.

Prepare Taxes | A
I helped Will make a spreadsheet for us to track the year’s farming expenses, and was able to give him all the receipts I had filed away so he could sort and enter them. Will worked tirelessly at using these raw materials to prepare everything and turn the resulting information over to the lady who does our taxes. We accomplished this goal – hurrah!

Balance & Maintain Checkbook | F
I didn’t even make a beginning on this task, besides storing away the receipts to be entered. Bad Erin. Guess this will have to be a March rollover goal.

Recurring Resolutions

Blog 2-3 Times Per Week | B
I only blogged 1-2 times per week this month, however, I think that’s probably a more achievable goal for the time being and works better with the other responsibilities I have (and the lack of internet at our house). Since failing to fully complete this goal helped me realize how I need to adapt it in the first place, I’m giving myself a B.

Read the Bible Daily | A

Still current and trucking along through Numbers! Having read daily for an entire two months seems like a huge accomplishment (even if it’s a rather small one) and has been really encouraging.

Journal Daily | F

Failed again. Oh the humanity! I actually did write one more entry, but that is still pathetic. Get it together, Erin!

Read Four Books | A+

  • Scarlet by Marissa Meyer | This book was more violent and adult than the first book in the series, and I didn't like the character of Scarlet as much as I like Cinder (who appeared considerably less). On the other hand, the plot continues to thicken, the world is interesting, and the story is fast-paced and pretty intriguing. Hopefully there will be more of Cinder in the 3rd installment.
  • The Hobbit by J.R.R. Tolkien (audiobook) | One of my very favorite stories, and it grows richer and more beloved each time I revisit it. The narrator was excellent and this story really seems almost meant to be read aloud. :)
  • Good Things for Organizing by Martha Stewart | I know some people can't stand Martha because of course all the houses in the pictures are unattainably pristine and organized, but after I chuckle at the airy laundry rooms and vast linen closets and 18th century armoires (which are apparently available everywhere), I really do feel energized and challenged to see how I can put some of the concepts into practice. Many of the ideas are actually very do-able, and I feel inspired to get busy organizing and decorating with what I have (I can always dream about that mudroom...). :
  • The Perilous Gard by Elizabeth Marie Pope | A well-written, interesting, old-fashioned sort of story that seamlessly wove together historical fiction with the more treacherous and obscure world of The Fair Folk.
  • Dealing with Dragons by Patricia C. Wrede | A fun, light-hearted spin on the classic fairytale model. This book would probably be an especially good hit with younger readers.
I actually went above and beyond this month, but of course this is one of my most enjoyable goals. :) My reading list was definitely a bit on the lighter side too, but the one housekeeping book I read was really inspiring and gave me lots of good ideas. The Perilous Gard was definitely my favorite out of all my fiction selections.

Finish Writing Thank-You Notes | D
I made good progress but still have far to go on the wedding notes, especially if I want to get them all sent off before our anniversary (eep!). I have to really settle in for a last great effort in March.

Overall Grade | B-
Well, I managed to scrape by with a B- again (barely!), but I'm not terribly surprised considering the disproportionately large number of goals I gave myself for the shortest month of year. I'll try my best to restrain my fervor and give myself a more manageable list for next month.

Unbroken


I haven't read Unbroken by Laura Hillenbrand yet, but it's one of Will's favorite stories and I've been meaning to read it for quite some time. After watching this Olympics preview for the upcoming movie, I'm even more inspired to read it. I think I'll definitely be putting it on my book list for next month.

Currently...

Happy Wednesday! Instead of posting another photo of our snowy yard, I've devised a new form of torture for my readers for those times when I didn't prepare a post. :)

Eating...
Ice cream. I am currently writing this post from a chair tucked behind a soft-serve machine at an ice cream show. When he's not guiding tours, my husband also works with marketing and developing new ice cream flavors for Country Dairy (which literally has the best milk and ice cream on the planet). This naturally has its perks (and dangers... imagine unlimited access to chocolate milk and ice cream... imagine...). One of these dangerous perks is going to ice cream shows, which is great for networking and making sales and all that, but it's also great for eating more free ice cream than you could possibly want. The key is pacing yourself. Personally, I can eat salt and vinegar all day but my threshold for sweets is pretty low, so although Will has been plying me with little cups of ice cream all day, I had to decline after the 6th or 7th sample. Besides Country Dairy (which is always good), I think my favorite was the Dole Whip (orange). It tasted just like an orange sherbet push-pop (amazing). :)

Feeling...
Sore. In general, I have an incredible aversion to exercise - an intolerance so severe that it borders on an allergy. Sometimes I fancy that I would like to be fit, but my body immediately panics and sirens start going off in my head... total revolt. However, I also like to be able to get the car out of the driveway, so the record snowfall has sabotaged my body's Automatic Exercise Shut-down Response. I've actually been glad that it's gotten me out of the house though and the exercise and fresh air has really felt good. I think my tiny biceps might even be benefiting.

Enjoying...
Fleece-lined tights. I've been wistfully pondering them ever since the snow began to fall, but last week (encouraged by this lovely lady's recommendation) I finally broke down and bought a pair from T.J. Maxx for about six bucks. Where have they been all my life? I've been trying to figure out how to wear skirts and dresses this winter without sacrificing warmth, and fleece-lined tights seem to do the trick. :)

Monthly Goals: February 2014

A new month of exciting possibilities. Here we go! :)


Bust the Clutter: Downstairs

Since February is a short month and I have a long list of projects I’d like to work on, I’m going to focus my de-cluttering efforts to the downstairs living areas that still need work before I tackle the upstairs bedrooms.

Wash Eggs Daily

We currently have 30 laying hens, and although the snow and cold temperatures have definitely put a damper on their production, we are still getting 8-15 eggs a day. That may not seem like a lot, but after the first few weeks of novelty, washing the crud off that many eggs and disinfecting the sink every day lost some of its fairy-tale charm, let us say. This month, my goal is to wash them every day. Bleh.

Purge The Closets

I've been working on this a little in my spare time, but I'd like to go through our clothes this month and clean out our closet and dressers. I know my wardrobe could certainly use a good paring down, and I'd like to toss at least a few of Will's 20+ white shirts speckled with the interesting remains of chicken butchering (I think he deserves a fresh set for the new year). :)

Write a Cleaning Schedule

Before Christmas, reading the Fly Lady’s book really inspired me to work harder on de-cluttering and cleaning the house with baby-steps, but I got a little slack over the holidays. I’d like to jump back into my daily routines again and actually write out a weekly schedule to use as a checklist (as the Fly Lady suggests).

Prepare Taxes
Before I got married, my Dad has always helped me with my taxes (read: I was present but probably not paying attention), so I’m not exactly sure what this mysterious process involves, but I’ll try to help Will get our taxes ready however I can.

I was consistent with the reading and marking part last month, but I need to actually fill out my little “reading journal” for Bible Study with my favorite part of the reading more often.

Journal Daily: This was such an utter failure that I will even take weekly entries as a victory this month.

Read Four Books: This is a short month, but I'm looking forward to more reading. :)

January Report Card 2014

As my four readers (we few, we faithful few, we band of brothers sisters...) may or may not remember, at the beginning of January I made a wildly optimistic list of goals for the month which I had moderate hopes of accomplishing. Well, January has flown by and it’s time to evaluate my goal-keeping efforts during the past month. In the words of Inigo Montoya: "Humiliation galore."



Blog 2-3 Times Per Week | A+
To my complete surprise, snow storms and all, I actually wrote 2-3 posts per week for a whole month. Hooray! This might have been a painful triumph for whoever suffered through the reading of them, but hopefully persistence counts for something. :) Since this is one of my few victories and I'm making up my own grades (mwahaha) I'm going to live it up and give myself an A+.

Read the Bible Daily | A
Will and I managed to keep to our “Read the Bible in a Year Plan” for an entire month! Sometimes this meant reading at midnight, and we each had our days of cajoling the other to read when we felt like going to bed, but we made it. I missed two days of my individual reading and marking through Proverbs, but we did read aloud together every day, so I’ll call that an A.

I wrote one entry during the entire month. It read as follows:

“1 January 2014
Happy New Year!”

Clearly a very astute observation, and a really worth-while sentiment to share with posterity.
With this one, I really just have to laugh.

Bust the Clutter | C+
I de-cluttered our front room (including the especially daunting task of sorting through the mountain of paperwork and letters that had accumulated on Will’s desk) and made progress in the dining area and den, but this definitely still needs work. Good effort but need for improvement... C+.

Read Four Books | B
This month I ended up having more time to read than usual, so although I didn't quite finish, I was actually pretty close. This month I read North and South by Elizabeth Gaskell (a slow-paced read, but interesting) and Cinder by Marissa Meyer (a fast-paced young adult novel based on Cinderella, set in a dystopian future where she is a cyborg from the moon... not my usual fare but I couldn't put it down), and listened to Mansfield Park by Jane Austen (always good) on audiobook while doing chores around the house. I'm only a few pages away from finishing Bed and Board: Plain Talk About Marriage by Robert Farrar Capon (took me a chapter or two to get into, but Will and I have had a wonderful time reading and talking through it) so I'm going to be lenient here and give myself a B. I really enjoyed them all and am looking forward to next month's books. :)

Finish Writing Thank You Notes | D
I've written and mailed half of the Christmas thank you notes but still have a few left to write, and have a mountain of wedding ones to wade into. A tiny amount of progress, but I really need to get cracking on this goal as my top priority this month. It isn't a very difficult task, just an overwhelming one, and it weighs on my mind. I should probably make dinner ahead one day and just tie myself to a chair until I finish. Stay tuned....

Have Dinner Ready When Will Gets Home | B
This goal was a bit hard to measure. Some nights we had to eat later or were away from home, so overall it was difficult to keep track. I definitely had dinner ready and waiting more nights than I had previously, however, so I’m going to give myself a B for Noticeable Improvement.

Overall Grade | B-
Not shocking, considering my lofty aspirations and over-enthusiastic New Years zeal, so I'm actually not too disappointed. However, this leaves lots of room for improvement as I sally forth into the next month hopefully a tad wiser from lessons learned (though probably not much). The beauty of the monthly goal plan is that even if you have a disastrous month, a new one comes along in a few weeks where you can start fresh with just as much excitement, hope, and good intention.

January Sunrise


Will and I are getting ready to head out of town this afternoon to attend the Northern Michigan Small Farms Conference and as I didn't get around to preparing anything more exciting, I thought I'd post a picture of one of the startling sunrises we've been having lately and hope you overlook my laziness. It was too dark for my camera to get a good picture earlier, but just before sunrise the entire sky glows with red and orange until the sun pops over the horizon. It's really quite spectacular.


I'm currently working on writing up a report card for my January Goals, so if you feel like having a good laugh (ah, optimism), you can look for that appearing sometime early next week. Hope you all have a happy last day of January, and a pleasant weekend. :)

Let's Be Honest

Hello again! I hadn't intended to disappear for a week, but apparently Michigan has been getting some of the deepest snow cover in the US. Not exactly a distinction I would have hoped for... but... hey, congratulations, Michigan. In any case, the last winter storm was so generous with the snow that Will and I spent the greater part of our weekend shoveling free our cars and driveway and paths to our propane tank, which meant no trips to the library for internet. As I discovered later, even the library was buried behind a mountain of snow, so any way you look at it, our link to the outside world was pretty much toast. This made me feel very dramatic and overexcited, and I spent several minutes imagining our new lives of isolation in the wilderness, with only Will's knowledge of edible wildlife to feed us and our rather limited knowledge of the stars to guide us (if, you know, we felt like exploring). Then Will reminded me that his phone had internet (right... I knew that....).

Since I don't have the heart to post another picture of snow, I thought I'd share something my lovely friend Karyn sent me today. Just in case you need a bit of cheering up before you shovel the driveway for the 7th time today, check out this list of "honest" company slogans.


According to WebMD, I currently might be suffering from Sleep Deprivation, Caffeine Withdrawal, Low Blood Pressure, Exercise (haha), Tuberculosis, Malnutrition OR Obesity, Hepatitis, or Typhoid Fever.

Fresh Snow

It's been a deliciously quiet, snowy Monday morning.


The day started off with hot coffee shared with William, which is always a good beginning. After he left for work it's slipped nicely by between washing dishes, starting pulled pork in the crock pot, folding laundry, and reading North and South.


And all the while, the snow has been drifting silently down, impossibly soft and slow.

Snowy Day Soup

As you may have guessed, it's been rather cold and snowy here (or rather... more cold and snowy) these past few weeks. I love to look at the snow, of course, (from the safety of my window), especially when it's floating down soft and unbelievably silent, though I will admit that it's not very fun to shovel, track all over the house, and scrape off the car. These days I prefer to be safely tucked indoors, preferably swathed in at least 2 pairs of socks, 3 sweaters, and 17 blankets, with a good book and a steaming hot cup of hot chocolate. Or at least, that's how I spend my days in my imagination.

In reality, I've been spending my days safely tucked indoors, swathed in 1 pair of socks, 2 sweaters, and 17 blankets, cooking up as many dinners of the consistency of baby food as I can manage. Will got his wisdom teeth removed this month, and during the week after, smoothies, yogurt, pudding, and pureed soups were the order of the day. It was more challenging than I thought to find soup recipes that were smooth enough for Will to eat and also had a little variety, so I thought I'd share two of our favorites. Besides being easy on the aching jaw, they're just the thing for a cozy supper on a snowy evening.

Creamy Potato Soup
Adapted from Foodess and Eat, Love, Run
This soup is very filling and satisfying. The chicken broth, Cajun spices, and cream cheese make this a very flavorful, warm-tasting potato soup – not bland at all! Serves 6.

Ingredients:
  • 2 tbsp. butter
  • 1 large yellow onion, chopped
  • 1 clove garlic, minced
  • 2 large potatoes (I actually used 6 small potatoes – 2 reds and 4 russets), peeled and cubed
  • 1/2 tsp. Cajun seasoning (I used a few pinches of paprika, cayenne, red pepper flakes, oregano, and garlic powder)
  • 3-5 cups chicken broth
  • 1/4 cup milk
  • 2 tbsp. flour
  • 1 cup whole milk + 2 oz cream cheese (you could also just use 1 cup of cream)
  • 1 tsp. salt
  • pinch of black pepper
Method:
1. Heat butter in a 5-qt Dutch oven over medium heat. (If you haven’t noticed, I like to use my Dutch oven for everything, but a large saucepan will also work in a pinch). Add the onion and cook until tender (but not browned) – about 5 minutes. Add the garlic and sauté 1 minute. Add the potatoes and Cajun seasonings and toss well.

2. Add enough chicken broth to just cover the potatoes. Bring to a boil, then reduce heat to a simmer for about 20 minutes, until potatoes are fork-tender.

3. In a small bowl or liquid measuring cup, whisk together the 1/4 cup of milk and 2 tbsp. of flour until completely combined. Slowly pour into the simmering soup while stirring. As the soup continues to simmer, it should thicken slightly.

4. Add the 1 cup of whole milk and 2 oz of cream cheese (or 1 cup cream) and stir into the soup until the cream cheese has melted and mostly disappeared into the soup. Carefully transfer soup to blender and process in batches until smooth (remember to vent the lid!).* Return the soup to your Dutch oven, add additional broth or cream according to preference, and season with salt and pepper to taste.

*Note: You can also just mash up the potatoes with a wooden spoon or potato masher if you want the texture to be heartier.


Peanut Butter Pumpkin Soup
Adapted from The New Basics Cookbook and Barefoot in Paris: Easy French Food You Can Make at Home
This soup sounded a little weird to me at first, but it’s delicious – warm, nutty, and autumnal. It cools off fast, so make sure it’s hot when you serve it. Serves 4-6.

Ingredients:
  • 2 tbsp. unsalted butter
  • 1 tbsp. olive oil
  • 1-2 small yellow onions, chopped
  • 1 large sweet potato, peeled and roughly cubed
  • 1 can (15 oz.) pumpkin puree (not pie filling)
  • 3 cups chicken stock or broth
  • 1 tsp. salt
  • 1/2 tsp. pepper
  • 1/2 cup smooth peanut butter
  • 1 cup half-and half
Method:
1. In a 5-qt Dutch oven, heat butter and oil on medium-low heat. Add the chopped onions and cook 10 minutes, or until translucent, stirring occasionally.

2. Add the sweet potato, pumpkin, chicken stock, salt, and pepper; heat to boiling on medium-high heat. Cover and simmer on medium-low for 20-30 minutes, or until sweet potatoes are very tender, stirring occasionally. When the sweet potatoes are very soft, add 1/2 cup of peanut butter and stir until incorporated.

3. Process the soup until smooth by putting it through a blender in batches (remember to vent the lid of the blender!); you could also use a food mill or even a hand blender. Once smooth, return the soup to your Dutch oven and add the half-and half. Heat slowly, stirring occasionally, until the soup is again hot and steaming. Serve and enjoy!

Will and I are taking down our Christmas tree today. I know it's late even if you celebrate the 12 Days of Christmas (yes please!), but the lights and greenery looked so cheerful during our snap of cold and snowy weather that we didn't have the heart to toss it out until today. So, until next year, Merry (Belated) Christmas from both of us! :)

A Crayfish by Any Other Name Would Taste as Crunchy.

I'll confess, I can't resist tests and quizzes that aren't graded. I came across this article the other day, and Will, my sisters-in-law, and I had such a kick testing ourselves that I thought I'd share.

Although I've lived most of my life in the South, while Husband and Sisters grew up in Michigan, their Mom was born and raised in Arkansas and my parents are from Maryland, so we definitely have a funny bit of north/south accent crossover. We all were true to the states we grew up in when it came to caramel, soda/pop, and Thanksgiving, but I say syrup like a New-Englander (much to Will's chagrin), we all agree that coleslaw is "slaw," and we were split three ways on the miniature lobsters that I have always referred to as Crayfish, Will knows as Crawfish, and Older Sister calls Crawdad. 

In the end, however, we all agreed that the proper way to say pecan is "pick-AHN," which is of course regional to none of us. Go figure. Where does your dialect place you?

Happy New Year!

I meant to post this on New Years Day, but was unable to manage it due to our limited internet access. Consequently, of course, I nearly didn’t post this at all. However, life is rarely perfect, and I guess it’s best to give up trying to maintain that illusion and instead enjoy the life we're given. :)


I love celebrating the New Year. Sometimes it’s a little surprising (and even scary) how fast the old year went by, but it amazes me when I look back and am able to glimpse a little better all the things God has done in the past year through the hard times and the joyful, and to celebrate that we have been blessed with a fresh one ahead, “with no mistakes in it yet,” as Anne Shirley would say. :)

Rather than listing a whole year’s worth of resolutions here and then promptly forgetting them (and hoping you do to), I’m borrowing an idea from She Learns As She Goes and listing my monthly goals and resolutions. I’ll write out my list at the beginning of each month, and then check back in at the end of the month to report on how horribly I neglected them (let’s be honest here). A bit of extra accountability can’t hurt. :) Here goes…

JANUARY RESOLUTIONS

Blog 2-3 Times Per Week
Ideally, I’d like to try to post 2-3 times per week. Realistically, I’d like to not post three times and then disappear for a year. Since we don’t have internet at our house this can be tricky, but my plan is to write a few drafts and put them in the queue for times when I can’t get to the library.

Read the Bible Daily
Will and I are working on reading the Bible in a year, as well as some additional daily reading and marking for a Bible Study. It’s easy to get behind if you miss even one day (we completely fell off the wagon last year somewhere deep among the ceremonial sacrifices), so my motto this year is "Constant Vigilance!"

Journal Daily
I don’t have high standards on this one, but it would be an improvement to jot down just one or two little anecdotes from the day, a new favorite recipe, or even a to-do list.

Bust the Clutter
Clutter is a constant battle in our house with two pack-rats of varying degree, and paper tends to pile up. This month I plan to get rid of our clutter "hot spots" (or fall in the attempt) so that I can pare down to the belongings we need or love and focus on making our house a more warm, orderly, and welcoming place. Sometimes it's hard not to feel apathetic about our aging rental, or hard to settle in when I'm not sure how long we'll be living there, but I think it's time to move past just cleaning and bare bones organizing and really set to work nesting, beautifying, and attempting to make our home not just a house, but a haven. Carpeted kitchen floor, mice, leaks, drafts, and all. :)

Read Four Books
As tradition dictates, I signed up to read a wildly unrealistic number of books for my 2014 Goodreads Challenge. Last year I barely made it to my lofty goal of 25, so obviously it made sense to double that number and try for 50, which works out to about a book a week. Prospects are bleak.

Finish Writing Thank You Notes
I need to finish writing our Christmas thank you notes this month. And wedding thank you notes. I know, truly appalling. But hopefully the shame will be a good motivator now. :P

Have Dinner Ready When Will Gets Home
Sometimes dinner is ready to go when Will gets home, but sometimes it’s still in progress. I’d like to have dinner on the table (or ready to be served) when Will gets home so I can be more present for him rather than scrambling around the kitchen trying not to burn things while he tells me about his day.
